Four main types of pastry will be covered - shortcrust pastry, sweet pastry, choux pastry and rough puff pastry. These pastries will be used to create pies, tarts, quiches and puffs.


This course is divided into four lessons. 
Lesson 1:  Choux Pastry:  Cream Puffs and Eclairs
Lesson 2:  Sweet Pastry:  Apple Pie and Frangipane Tarts using Shortcrust Pastry
Fruit Tartlets and Lemon Meringue Tartlets using Sweet Pastry
Lesson 3:  Savoury Shortcrust Pastry:  Quiche Lorraine, Spinach Quiche, Chicken Pasties

Lesson 4:  Rough Puff Pastry:  Vol Au Vent with sweet and savoury fillings.
Chicken Pot Pies, Portuguese Egg Tarts and Palmiers

This is a hands-on course and participants will work individually to make all the pastries in class.

  • Lesson 1:  Choux Pastry:  Cream Puffs and Eclairs

    • Choux pastry 
    • Cookie crust topping
    • Control the baking temperature and time to achieve crisp cream puffs.
    • Pastry cream filling
    • Glaze and decorate cream puffs 

    Lesson 2:  Sweet Pastry:  Apple Pie and Frangipane Tarts using Shortcrust Pastry, Fruit Tartlets and Lemon Meringue Tartlets using Sweet Pastry

    • How to make sweet pastry and sweet shortcrust pastry. 
    • How to line a large pie dish, small tart rings and tartlet moulds with pastry.
    • How to make apple pie, frangipane tarts, lemon meringue tarts and fruit tartlets
    • Control of baking time and temperature for pies and tarts 

    Lesson 3:  Savoury Shortcrust Pastry:  Quiche Lorraine, Spinach Quiche, Chicken Pasties

    • How to make savoury short-crust pastry.
    • How to blind bake pastry for quiche.
    • How to make aromatic Quiche Lorraine and Spinach Quiche
    • How to make pasties 

    Lesson 4:  Rough Puff Pastry:  Vol Au Vent with sweet and savoury fillings.
    Chicken Pot Pies, Portuguese Egg Tarts and Palmiers

    • How to make rough puff pastry with butter.
    • How to make savoury pie fillings for chicken pot pies
    • How to make Portuguese egg tarts and Palmiers with puff pastry. 
    • How to make Vol Au Vent with fillings
